Recipes - Pe-Tsai Mien
Ingredients

Chinese leaves (stem lettuce), thickly shredded

50 g/2 oz/1/4 cup
butter
-
150 ml/2/3 cup
vegetable stock
-
1 bunch of spring onions (scallions), cut into short lengths
-
1 garlic clove,
crushed
-
4 ripe tomatoes,
skinned and chopped
-
15 ml/1 tbsp soy sauce
-
2 x 85 g/2 x 3 1/2 oz/2 small packets tomato-flavored
instant noodles
Method:
-
Stir-fry (sauté) the Chinese leaves in half the
butter for 3 minutes until slightly softened.

Add
the stock, spring onions, garlic, tomatoes and soy
sauce. Boil fairly rapidly until the Chinese leaves
are just tender and bathed in sauce.

Meanwhile, cook
the noodles according to the packet directions.

Pile on to serving plates and spoon the Chinese
leaves over. Serve
hot.
