Vegetables Recipes - Piquant Broccoli Casserole

Ingredients

  • 350 g/12 oz/1 1/2 cups long-grain rice

  • 350 g/12 oz broccoli, cut into florets

  • 1 onion, finely chopped

  • 2 celery sticks, finely chopped

  • 1 small green (bell) pepper, finely chopped

  • 25 g/1 oz/2 tbsp butter

  • 298 g/1 can condensed cream of mushroom soup

  • 100 g/4 oz/1/2 cup Cheddar cheese spread

  • Salt and freshly ground black pepper

  • Tabasco sauce

  • 50 g/2 oz Cheddar cheese, grated


Method:

  1. Cook the rice in plenty of boiling salted water for 15 minutes until just tender.

  2. Add the broccoli half-way through cooking. Drain, rinse with boiling water and drain again. Turn into a casserole (Dutch oven).

  3. Mix together the remaining ingredients except the grated cheese and pour over.

  4. Sprinkle with the grated cheese and bake at 150°C/350°F/gas mark 4 for about 30 minutes until piping hot and golden brown.
