Vegetables Recipes - Quick Creamy Corn and Vegetable Lunch

Ingredients

  • 300 g/1 can creamed corn

  • 200 g/7 oz/1 small can diced mixed vegetables, drained

  • 50 g/2 oz Cheddar cheese, grated

  • 2.5 ml/1/2 tsp dried mixed herbs

  • Freshly ground black pepper

  • A little milk

  • 225 g/8 oz/1 cup farfalle

  • A little crisp, crumbled bacon


Method:

  1. Empty the com into a saucepan. Stir in the vegetables, cheese, herbs and a good grinding of pepper.

  2. Heat through, stirring all the time until piping hot. Thin slightly with a little milk if liked.

  3. Meanwhile, cook the pasta according to the packet directions, drain. Add to the corn mixture, toss well and serve with the bacon.
