Vegetables Recipes - Russian-style Lentil Warmer

Ingredients        

  • 1 onion, grated

  • 1 small Swede, grated

  • 50g/1/4 cup butter

  • 2 large cooked beetroot (red beets), grated

  • 100g/2/3 cup red lentils

  • 750ml/3 cups vegetable stock

  • 15ml/1 tbsp red wine vinegar

  • 2.5ml/1/2 tsp dried tarragon

  • salt and freshly ground black pepper

  • 225g/2 cups whole wheat route

  • 150ml/2/3 cup soured (dairy sour) cream

  • Grated mature Cheddar cheese                                       


Method:

  1. Fry the onion and Swede in the butter for 2 minutes, stirring.

  2. Add the remaining ingredients, except the pasta, soured cram and Cheddar, seasoning well with salt and pepper.

  3. Bring to the boil, reduce the heat and simmer uncovered for 30 minutes until the vegetables are cooked through.

  4. Meanwhile, cook the route according to the packet directions. Drain and add to the cooked lentil mixture.

  5. Simmer gently for 5 minutes, stirring. Pile on to warm serving plates.

  6. top each with a spoonful of soured cream and serve with grated Cheddar.
