Scented Pea Pilau
Ingredients

350 g/12 oz/1 1/2 cups
basmati rice
-
50 g/2
oz/1/4 cup butter
-
1 garlic clove, crushed
-
225 g/8 oz/2 cups
frozen peas
-
2 bay leaves
-
5 ml/1 tsp ground
cardamom
-
750 ml/3 cups water
-
15 ml/1 tbsp salt
-
150 m/2/3 cup
plain yoghurt
Method:
-
Wash and drain the rice. Heat the butter in a
flameproof casserole (Dutch oven).
-
Fry (sauté)
the garlic, rice, peas, bay leaves and cardamom
gently for 5 minutes over a moderate heat. Add the
water and salt.

Bring to the boil, cover and
cook
in the oven at 150°C/300°F/gas mark 2 for 40 minutes
or until the rice is tender and has absorbed all the
liquid.

Remove the bay leaves, fluff up with a fork
and serve with a little yoghurt spooned over.
