Vegetables Recipes - Scented Pea Pilau

Ingredients

  • 350 g/12 oz/1 1/2 cups basmati rice

  • 50 g/2 oz/1/4 cup butter

  • 1 garlic clove, crushed

  • 225 g/8 oz/2 cups frozen peas

  • 2 bay leaves

  • 5 ml/1 tsp ground cardamom

  • 750 ml/3 cups water

  • 15 ml/1 tbsp salt

  • 150 m/2/3 cup plain yoghurt


Method:

  1. Wash and drain the rice. Heat the butter in a flameproof casserole (Dutch oven).

  2. Fry (sauté) the garlic, rice, peas, bay leaves and cardamom gently for 5 minutes over a moderate heat.  Add the water and salt.

  3. Bring to the boil, cover and cook in the oven at 150°C/300°F/gas mark 2 for 40 minutes or until the rice is tender and has absorbed all the liquid.

  4. Remove the bay leaves, fluff up with a fork and serve with a little yoghurt spooned over.
