Vegetables Recipes - Sicilian Pasta with Plenty

Ingredients                     

  • 75 ml/5 tbsp olive oil

  • 1 large onion, sliced

  • 1 garlic clove, crushed

  • 450 g/1 lb courgettes (zucchini), sliced

  • 1 aubergine (eggplant), quartered and sliced

  • 1 green (bell) pepper, sliced

  • 100 g/4 oz/2/3 cup stoned (pitted) black olives

  • 25 g/1 oz/1/2 can anchovy fillets, chopped

  • 5 ml/1 tsp chopped capers

  • 10 ml/2 tsp chopped marjoram

  • 15 ml/1 tbsp chopped parsley

  • 450 g/1lb pappardelle

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup grated Parmesan cheese


Method:

  1. Heat the oil in a large pan. Add the prepared vegetables and fry (sauté), stirring for 4 minutes.

  2. Add the olives, anchovies, capers and herbs. Reduce the heat, cover and cook gently for 15 minutes.

  3. Meanwhile, cook the pappardelle according to the packet directions. Drain and return to the pan.

  4. Add the vegetable mixture and toss well. Season to taste, then serve with the cheese sprinkled over.
