Vegetables Recipes - South American Okra Pilat

Ingredients

  • 4 streaky bacon rashers (slices), rinded

  • 225 g/8 oz okra, thickly sliced

  • 600 ml/2 1/2 cups water

  • 5 ml/1 tsp salt

  • Freshly ground black pepper

  • 225 g/8 oz/1 cup long-grain rice


Method:

  1. Fry (sauté) the bacon in a large frying pan (skillet) until crisp. Remove and crumble the bacon and reserve.

  2. Fry the okra in the bacon fat, stirring over a moderate heat for about 5 minutes or until golden.

  3. Add the water and remaining ingredients. Stir well and bring to the boil.

  4. Cover, reduce the heat and simmer gently for 20 minutes or until the rice is tender and has absorbed all the liquid.

  5. Stir lightly then sprinkle with the bacon and serve straight from the pan.
