Heat the oil in a
saucepan. Add the garlic, onion, carrot and celery,
if using, and cook gently, stirring for 3 minutes
until the onion is softened but not browned.
Add the passata and sugar, cover and simmer gently for 30
minutes.
Stir in the basil and season to taste with salt and lots of pepper.
Meanwhile,
cook
the spaghetti
according to
the packet directions. Drain.
Pile on to a serving
dish, spoon the sauce over and sprinkle with grated
Parmesan cheese before serving.
