Vegetables Recipes - Spiced Carrot and Garlic Supreme

Ingredients

  • 750 g/1 1/2 lb carrots, chopped

  • 30 ml/2 tbsp milk

  • 40 g/1 1/2 oz/3 tbsp butter

  • 1 garlic clove, crushed

  • 1.5 ml/1/4 tsp mixed (apple pie) spice

  • Salt and freshly ground black pepper

  • 225 g/8 oz whole wheat spaghetti

  • Chopped parsley

  • 50 g/2 oz Feta cheese, crumbled


Method:

  1. Put the carrots in a saucepan with just enough water to cover them.

  2. Bring to the boil and cook for about 10 minutes until really tender. Drain, reserving the cooking liquid.

  3. Turn the carrots into a food processor or blender with the milk, butter and garlic. Run the machine until the mixture is smooth.

  4. Return to the saucepan. Add the mixed spice, salt and pepper to taste and enough of the cooking water to give a smooth puree. Heat through gently until piping hot.

  5. Meanwhile, cook the spaghetti according to the packet directions. Drain.

  6. Pile on to serving plates. Spoon the carrot puree over and garnish with the parsley and Feta cheese.
