Vegetables Recipes - Spicy Spinach Penne

Ingredients

  • 175 g/6 oz/1 1/2 cups penne

  • 40 g/1 1/2 oz/3 tbsp unsalted (sweet) butter

  • 2.5 ml/1/2 tsp grated nutmeg

  • 2 large onions, chopped

  • 5 ml/1 tsp chili powder

  • 900 g/2 lb spinach, well washed and torn into pieces

  • Salt and freshly ground black pepper

  • 150 ml/2/3 cup soured (dairy sour) cream


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with boiling water, drain again and return to the pan.

  2. Add a third of the butter and the nutmeg. Toss well. Meanwhile, melt the remaining butter in a pan.

  3. Add the onions and fry (sauté) for 3 minutes, stirring until lightly golden. Stir in the chili powder and cook for 1 minute.

  4. Add the spinach, cover and cook gently until tender, about 4-5 minutes, stirring from time to time. Season with salt and pepper.

  5. Pile on to the hot pasta and serve topped with soured cream.
