Vegetables Recipes - Tagliatelle with Walnuts and Broccoli

Ingredients                                                                  

  • 225 g/8 oz green tagliatelle (verdi)

  • 175 g/6 oz broccoli, cut into tiny florets

  • 120 ml/4 fl oz/1/2 cup mayonnaise

  • 120 ml/4 fl oz//1/2 cup fromage frais

  • 25 g/1 oz/1/4 cup coarsely chopped walnuts

  • 5 ml/1 tsp Dijon mustard

  • Salt and freshly ground black pepper


Method:

  1. Cook the tagliatelle in plenty of boiling salted water for to minutes or until just tender.

  2. Add the broccoli for the last 4 minutes of cooking time. Drain and return to the pan.

  3. Mix the mayonnaise with the fromage frais, walnuts and mustard.  Add to the pan with a little salt and lots of black pepper.

  4. Toss lightly over a gentle heat and serve straight away.
