Vegetables Recipes - Turkish Pilaf

Ingredients

  • 50 g/2 oz/1/4 cup butter

  • 1 small onion, finely chopped

  • 1 large garlic clove, chopped

  • 275 g/10 oz/1 1/4 cups long-grain rice

  • 600 ml/2 1/2 cups chicken stock

  • 5 ml/1 tsp caraway seeds

  • A little salt


Method:

  1. Melt the butter in a saucepan. Add the onion and garlic and fry (sauté) for 2 minutes to soften slightly.

  2. Add the rice and fry for a further 2 minutes. Stir in the stock, caraway seeds and a little salt.

  3. Bring to the boil, reduce the heat, cover and simmer gently for 20 minutes or until the rice has absorbed the water.

  4. Remove from the heat, fluff up with a fork, then cover with a clean cloth and leave for 30 minutes before serving.
