Vegetables Recipes - Vegetable Bolognese

Ingredients

  • 50 g/2 oz/1/4 cup butter

  • 2 garlic cloves, crushed

  • 1 onion, finely chopped

  • 225 g/8 oz/4 cups button mushrooms, sliced

  • 100 g/4 oz/1 cup walnut halves

  • 200 g/7 oz/1 small can chopped tomatoes

  • 75 g/3 oz/1/2 cup tomato puree (paste)

  • 2.5 ml/1/2 tsp dried oregano

  • Salt and freshly ground black     pepper

  • 100 g/4 oz/2/3 cup stoned (pitted) black olives, halved

  • 450 g/1 lb spaghetti

  • Grated Parmesan cheese


Method:

  1. Melt the butter and fry (sauté) the garlic and onion for 2 minutes, stirring.

  2. Add the remaining ingredients except the spaghetti and cheese and simmer gently for 10-15 minutes. Taste and re-season if necessary.

  3. Meanwhile, cook the spaghetti according to the packet directions. Drain.

  4. Pile on to plates, top with the sauce and sprinkle with Parmesan cheese before serving.
