Ingredients

50 g/2 oz/1/4 cup butter

2 garlic cloves, crushed

1 onion, finely chopped

g/8 oz/4 cups button mushrooms,
sliced

100 g/4 oz/1
cup walnut halves
-
200 g/7 oz/1 small
can
chopped tomatoes
-
75 g/3 oz/1/2 cup
tomato puree
(paste)

2.5 ml/1/2 tsp dried oregano
-
Salt and freshly
ground black pepper

100 g/4
oz/2/3 cup stoned (pitted)
black olives, halved

450 g/1 lb spaghetti
-
Grated
Parmesan cheese
Method:
-
Melt the butter and
fry (sauté) the garlic and onion for 2 minutes,
stirring.
-
Add the remaining ingredients except the
spaghetti and cheese and simmer gently for 10-15
minutes. Taste and re-season if necessary.

Meanwhile, cook the spaghetti according to the
packet directions. Drain.

Pile on to plates, top
with the sauce and sprinkle with Parmesan cheese
before serving.
