Vegetables Recipes - Whole-wheat Spaghetti with Roasted Plum Tomatoes

Ingredients                     

  • 1 kg/2 1/4 lb ripe plum tomatoes, thickly sliced lengthways

  • 3 garlic cloves, finely chopped

  • 75 ml/5 tbsp olive oil

  • 30 ml/2 tbsp chopped basil

  • 5 ml/1 tsp caster (superfine) sugar

  • A few drops of Tabasco sauce

  • Salt and freshly ground black pepper

  • 25 g/1 oz/1/4 cup freshly grated Parmesan cheese

  • 350 g/12 oz whole wheat spaghetti

  • 100 g/4 oz Mozzarella cheese, grated


Method:

  1. Gently mix the tomatoes with the garlic, olive oil, basil, sugar, Tabasco, a little salt and pepper and the Parmesan cheese.

  2. Arrange the tomatoes in a single layer on a baking sheet. Bake for 30 minutes at 230°C/450°F/gas mark 8 until slightly charred at the edges.

  3. Meanwhile, cook the spaghetti according to the packet directions. Drain and return to the saucepan.

  4. Add the tomatoes, toss very gently, then serve topped with the Mozzarella and a good grinding of black pepper.
