Chicken Tikka Recipe
Ingredients
For the marinade
-
150ml/ 1/4 pint natural low-fat yogurt
-
5ml/1 tsp ground paprika
-
10ml/2 tsp grated fresh root ginger
-
1 garlic clove, crushed
-
10ml/2 tsp garam masala
-
2.5ml/1/2 tsp salt
-
red food coloring (optional)
-
juice of 1 lemon
Serves 4
Method:

Joint the chicken and cut it into eight even-size
pieces, using a sharp knife.

Mix all the marinade ingredients in a large dish,
add the chicken pieces to coat and chill for 4 hours
or overnight to allow the flavor to penetrate the
flesh.

Preheat the oven to 200C. Remove the chicken pieces
from the marinade and arrange them in a single layer
in a large ovenproof dish. Bake for 30-40 minuets or
until tender.

Baste with a little of the marinade while cooking.
Arrange on a bed of salad leaves and serve hot or
cold.
Notes: This dish would
also make an excellent starter. Joint the chicken into
smaller pieces and reduce the cooking time slightly,
then serve with lemon wedges and just a simple salad
garnish.
