Chicken Tikka Recipe

 

Ingredients

  • 175kg/3 1/2 lb chicken

  • mixed fresh salad leaves such as frisee, oak leaf lettuce or radiccio, to serve

For the marinade

  • 150ml/ 1/4 pint natural low-fat yogurt

  • 5ml/1 tsp ground paprika

  • 10ml/2 tsp grated fresh root ginger

  • 1 garlic clove, crushed

  • 10ml/2 tsp garam masala

  • 2.5ml/1/2 tsp salt

  • red food coloring (optional)

  • juice of 1 lemon

Serves 4


Method:

  1. Joint the chicken and cut it into eight even-size pieces, using a sharp knife.

  2. Mix all the marinade ingredients in a large dish, add the chicken pieces to coat and chill for 4 hours or overnight to allow the flavor to penetrate the flesh.

  3. Preheat the oven to 200C. Remove the chicken pieces from the marinade and arrange them in a single layer in a large ovenproof dish. Bake for 30-40 minuets or until tender.

  4. Baste with a little of the marinade while cooking. Arrange on a bed of salad leaves and serve hot or cold.

Notes: This dish would also make an excellent starter. Joint the chicken into smaller pieces and reduce the cooking time slightly, then serve with lemon wedges and just a simple salad garnish.
