Honey and Orange
Glazed Chicken Recipe
Ingredients

4x175g/6 oz boneless chicken breast

15ml/1 tbsp sunflower oil

4 spring onions, chopped
-
1 garlic clove. crushed
-
45ml/3 tbsp clear honey
-
60ml/4 tbsp fresh orange juice
-
1 orange, peeled and segmented
-
30ml/2 tbsp soy sauce
-
fresh lemon balm or flat-leaf parsley, to
garnish

baked potatoes and mixed salad, to serve
Serves 4
Method:

Preheat the oven to 190C. Place the chicken breasts,
with skins on, in a single layer in a shallow
roasting tin and set aside.

Heat the sunflower oil in small saucepan, add gently
fry the spring onions and garlic for about 2 minutes
until softened but not browned.

Add the honey,
orange juice, orange segments and soy sauce to the
pan, stirring well, and cook until the honey has
completely dissolved.

Pour the sauce over the chicken and bake, uncovered,
for about 45 minutes, basting once or twice until
the chicken is cooked. Checked by piercing with the
point of a knife; the juices should run clear.

Garnish with lemon balm or flat leaf parsley and
serve with baked potatoes and salad.
Notes: For a slightly
spicier version, look out for mustard that has been
flavored with honey to add to this dish instead of the
clear honey. Use the same amount.
