Mediterranean Turkey Skewers Recipe

 

Ingredients

  • 90ml/6 tbsp olive oil

  • 45ml/3 tbsp lemon juice

  • 1 garlic clove, finely chopped

  • 30ml/2 tbsp chopped fresh basil

  • 2 courgettes

  • 1 long thin aubergine

  • 300g/11 oz boned turkey, cut into 5cm cubes

  • 12-16 pickled onions

  • 1 red or yellow pepper, cut into 5cm squares

  • salt and ground black pepper

Serves 4


Method:

  1. Mix the oil with the lemon juice, garlic and basil in a small bowl. Season with salt and pepper.

  2. Slice the courgettes and aubergine lengthways into strips 500 thick. Cut them crossways about two-thirds of the way long their length. Discard the shorter length. Wrap half the turkey pieces with the courgette slices, and the other half with the aubergine slices.

  3. Prepare the skewers by alternating the turkey, onions and pepper pieces. If you are using wooden skewers, soak them in water for several minutes. this will prevent them from charring during grilling.

  4. Lay the prepared skewers on a platter and sprinkle with the flavored oil. Then leave them to marinate for at least 30 minutes. Preheat the grill or light the coals to prepare barbecue.

  5. Grill or barbecue for 10 minutes, until the vegetable are tender, turning occasionally. Serve hot.
