Soups and Sandwiches Recipes - Oyster Bisque

Ingredients    

  • 1 dozen (1 pint) shucked large raw oysters                  

  • 1 cup oyster liquor                          

  • 3 cups milk                                 

  • 1 cup heavy cream                    

  • 1 slice onion                               

  • 2 stalks celery                                 

  • 1 sprig parsley  

  • 1 bay leaf

  • 1/3 cup butter or margarine, melted

  • 1/3 cup flour

  • 1 3/4 tsps. salt

  • 1/2 tsp. Tabasco pepper sauce

  • Chopped chives

Makes 6 to 8 servings


Method:

  1. Drain oysters; reserve 1 cup liquor. Dice oysters into saucepan and add liquor; slowly bring oysters to boiling point; remove.

  2. In same saucepan scald milk and cream with onion, celery, parsley and bay leaf; strain.

  3. Blend butter with flour, salt and Tabasco pepper sauce. Slowly stir in scalded milk; stir over low heat until thickened.

  4. Add oysters and cooking liquid; heat to serving temperature. Garnish with chopped chives.
