- Oyster Bisque
Ingredients

1 dozen (1 pint)
shucked large raw
oysters
-
1 cup oyster
liquor
-
3 cups
milk
-
1 cup heavy
cream
-
1 slice
onion
-
2 stalks
celery
-
1 sprig
parsley
-
1 bay leaf
-
1/3 cup butter or
margarine, melted
-
1/3 cup flour
-
1 3/4 tsps. salt
-
1/2 tsp.
Tabasco pepper sauce
-
Chopped
chives
Makes 6 to 8 servings
Method:

Drain
oysters; reserve 1 cup liquor. Dice oysters into saucepan and add
liquor; slowly bring oysters to boiling point; remove.

In same
saucepan scald milk and cream with onion, celery, parsley and bay
leaf; strain.

Blend butter with flour, salt and Tabasco pepper
sauce. Slowly stir in scalded milk; stir over low heat until
thickened.

Add oysters and cooking liquid; heat to serving
temperature. Garnish with chopped chives.
