Soups and Sandwiches Recipes - Sausage and Pepper Filled Deli Rolls

Ingredients    

  • 1 1/2 lbs. sweet Italian sausage

  • 1 clove garlic, chopped

  • 2 red onions, sliced thinly

  • 2 red peppers, seeded and cut into thin strips

  • 2 green peppers, seeded and cut into thin strips

  • 3 tomatoes, chopped

  • 1 tap. oregano

  • Salt and pepper

  • 1 11-oz. package Pepperidge Farm Deli Rolls

Makes 6 servings


Method:

  1. Slice sausages in 1/2-inch thick crosswise slices. Fry sausage in a skillet until brown and cooked; remove from skillet.

  2. Add garlic, onions and peppers to pan drippings. Sauté for 5-6 minutes or until vegetables are tender but still crisp.

  3. Add tomatoes and oregano and simmer 5-6 minutes or until tomatoes are cooked. Season to taste with salt and pepper.

  4. Split roll and fill with sausage filling. Serve at once with plenty of napkins.
