750 g/1 3/4 lb large tomatoes

bunch basil

g/9 oz small mozzarella-rolls

g/9 oz grated Emmenthal cheese
Serves 4
Method:

Preheat the oven to 220°C (425°F), Gas mark 7.

Peel
the onions and chop finely. Do the same with the
capers. Mix the minced (ground) meat, onions,
capers, tomato pulp, spices, egg and breadcrumbs to
make a paste.

Grease a flan mould 26 cm/10 1/4 in in
diameter and add the minced (ground) meat mixture.
Smooth the top.

Cut the tomatoes in two and hollow out. Put one
basil leaf and one drained mozzarella ball in each
tomato half.

Arrange the tomatoes in a circle round
the edge of the flan mould, cut side downwards, and
press lightly into the minced (ground) meat mixture.
Season with salt and pepper.

Sprinkle the minced (ground) meat mixture with the
grated cheese and bake in the preheated oven on the
second-bottom shelf for about
30
minutes. It can be served hot or cold.
Note:
This dish is an excellent source of protein because
of the minced (ground) meat and cheese. It is
delicious served with a refreshing salad and white
bread, and can be eaten hot or cold.
