Tomato Quiche with Rocket

Method:

To make the dough: sift the flour into a bowl and
make a hollow in the centre. Sprinkle in the yeast
and sugar and pour in the lukewarm milk. Mix, adding
the flour little by little from the edges. Stand for
about 10 minutes in a warm place.

Add 1 00 g/3
1/2 oz (1/2
cup) butter at room temperature, 1/2 teaspoon salt and
the egg. Work into a dough by hand or using the
kneading hook of the mixer.

Sprinkle flour on the
dough, cover the bowl with a tea towel and put in a
warm place. The dough can be worked again when it
has doubled in size. Knead the dough vigorously
after it has risen. Butter a quiche dish generously.

Roll out the dough
about 1 cm (3/8 in) thick and line the quiche dish.
Prick the base with a fork. Pour 60 g/2 oz (4
tablespoons) melted butter over the base. Leave to
rise in a very cool oven, 50°C/120°F, for 20-30
minutes.

Remove, then preheat the oven to 200°C
(400°F), Gas mark 6.

Peel the onions and
divide into rings. Cut the tomatoes into four,
remove the
seeds and chop coarsely. Tear the rocket into
bite-sized pieces and cut the salami and boiled ham
into strips.

Put the sour
cream and quark in bowl and stir into a smooth
mixture. Beat in the egg yolk. Season with salt and
pepper. Pour the sour cream mixture onto the base.

Heat the rest of the
butter in a pan, add the onion rings, fry until
transparent and remove. Fry the tomatoes briefly in
the same butter and season with salt and pepper.

Arrange the onion rings and tomato pieces in the
sour cream mixture. Add the strips of salami and
ham. Garnish with rocket. Bake in the oven for about
30 minutes. Serve hot or cold.
Note:
The base of this
tomato, onion, rocket. salami and ham quiche is made
with a yeast dough. For the best results all the
ingredients must be at room temperature, including
the egg. All the ingredients should therefore be
taken out of the refrigerator in good time.
