Tomato Jam (Preserve)

Ingredients

1 kg/2 1/4 lb ripe
tomatoes

2 cm/1 in fresh
root ginger
-
grated peel of 1 orange
-
juice of 1 lemon

1 kg/2 1/4 lb (5
cups) pectin sugar
Makes about 500 g/18 oz jam
Method:

Coarsely chop the tomatoes and put in a saucepan.
Add 200
ml/7 fl oz
(7/8cup) water and bring to the boil. Simmer for 10
minutes. Pass through
a sieve, return to the saucepan
and leave to
cool.

Peel the ginger, slice thinly and chop
very finely.
Add the ginger together with the orange zest,
lemon
juice and preserving sugar (containing pectin) to
the mashed tomatoes.

Boil the jam (preserve)
vigorously over a high heat for 5 minutes until it
sets.

Pour the hot tomato jam (preserve) immediately into
jars with a
screw-top
lid. Allow
to cool down upside down.
Note:
Tomato jam (preserve) is a delicious snack that can
be enjoyed at any time of the day, on white bread or
on coarse brown bread.
