Recipes - Pear and Tomato Chutney Sauce

1 can pears (400
g/14 oz)

300 g/10 oz beef tomatoes

small red onions

250 ml/8 fl oz (1
cup) apple vinegar

1 teaspoon mustard
powder
-
1/2 teaspoon white
pepper

200 g/7 oz brown sugar

salt
-
1 cinnamon stick
Serves 4
Method:

Drain the pears and dice them. Cut the tomatoes into
quarters,
remove the seeds and cut into thin strips. Sprinkle
a little salt on the tomato strips. Peel the onions
and cut into rings.

Put the diced pears, tomato strips and onion rings
in a saucepan, add vinegar and bring to the boil.
Season with powdered mustard, pepper, sugar, salt
and cinnamon sticks.

Cook the mixture until thick,
stirring repeatedly.

Remove the cinnamon
sticks after cooking and pour the chutney into
preserving
jars. Store in a refrigerator. Use within 1 week of
opening.
Note: Pears and tomatoes make an excellent sweet-and-sour
chutney sauce. It is a particularly good relish with
savory puff pastry rolls such as spring rolls, or
with deep-fried vegetables.
