Ingredients

  • 400 g/14 oz plum tomatoes

  • 2 shallots

  • 1 clove garlic

  • 1/2 bunch smooth parsley

  • 1 avocado

  • salt

  • 1/4 teaspoon chili powder

  • juice of 1 lime

  • 2 tablespoons crème fraiche

Serves 4


Method:

  1. Peel the tomatoes, cut into quarters and remove the seeds. Cut the tomato quarters into very small cubes.

  2. Peel the shallots and the garlic clove; chop finely. Coarsely chop the parsley.

  3. Cut the avocados in half lengthways, remove the stone (pit) and scoop out the flesh with a spoon; cut the avocado into small cubes.

  4. Mix all these ingredients together and season with chili powder and lime juice. Stir the crème fraiche until smooth and add to salsa.

Note: This salsa dip is made from tomatoes and avocado is a spicy dip for Mexican tortilla chips. It is also a tasty spread which is delicious on bread.
