Tomato and Avocado Salsa

Ingredients

400 g/14 oz plum
tomatoes

2 shallots
-
1 clove garlic
-
1/2 bunch smooth
parsley
-
1 avocado
-
salt
-
1/4 teaspoon
chili
powder
-
juice of 1 lime
-
2 tablespoons
crème
fraiche
Serves 4
Method:

Peel the tomatoes,
cut into quarters and remove the seeds. Cut the
tomato quarters into very small cubes.

Peel the
shallots and the garlic clove; chop finely. Coarsely
chop the parsley.

Cut the avocados in half
lengthways, remove the stone (pit) and scoop out the
flesh with a spoon; cut the avocado into small
cubes.

Mix all these
ingredients together and season with chili powder
and lime juice. Stir the crème fraiche until smooth
and add to salsa.
Note: This salsa dip is made from tomatoes and avocado is
a spicy dip for Mexican tortilla chips. It is also a
tasty spread which is delicious on bread.
