Tomato Chutney Sauce with Morello Cherries and Apples

Ingredients

500 g/18 oz
tomatoes

250 g/9 oz
shallots
-
250 g/9 oz
russet apples

250 ml/8 fl oz (1 cup) red wine vinegar

200 g/7 oz
morello cherries, drained

1 teaspoon grain mustard

120 g/4 oz (generous
1/2 cup) brown sugar

salt

pepper
Serves 4
Method:

Peel the tomatoes, cut into quarters and remove the
seeds. Peel the
shallots and cut each into four. Peel the apples,
cut into quarters and remove the cores.

Put all these ingredients in a saucepan, add the
vinegar and bring to the boil.

Add the morello
cherries, mustard seeds, sugar, salt and pepper and
cook until the mixture becomes thick, stirring
often.

Season the chutney sauce again according to taste
and pour into
preserving jars. Store in the refrigerator. Use
within 1 week of opening.
Note:
A thick, tasty sauce
made from tomatoes, shallots, apples, morello
cherries and spices. It is delicious served cold
with roast pork, beef or turkey. It is also
excellent as a sauce with a meat fondue.
