Tomato and Haricot (White) Bean Sauce

Serves 4
Method:

Drain the haricot
(white) beans. Peel the tomatoes, cut into quarters
and remove the seeds. Cut the tomato quarters into
small cubes.

Peel the shallots and clove of garlic
and chop. Cut the breakfast bacon into small dice.
Chop the parsley.

Heat the oil in a pan
and sweat the bacon. Add the shallots and garlic.
Fry until transparent.

Add the haricot (white) beans
and diced tomatoes and cook to thicken the sauce for
about 15 minutes, stirring constantly. Stir in the
parsley and season with salt and pepper.

Serve the tomato and
haricot (white) bean sauce hot.
Note:
The tomatoes and
haricot (white) beans are cooked with bacon, onions,
herbs and parsley to make a nourishing, tasty sauce.
It is delicious served with pasta, gnocchi and fried
meat.
