Tomato and Honey Sauce

1 small onion

clove garlic

8 medium tomatoes

3 tablespoons
basil-infused oil

2 tablespoons forest honey

1 tablespoon balsamic
vinegar

salt

pepper
Serves 4
Method:
-
Peel the onion and
garlic clove. Chop both finely. Peel the tomatoes,
cut into quarters and remove the seeds. Cut the
tomato quarters into small cubes.

Heat the oil in a
pan. Add the onion with the garlic and fry. Add the
diced tomatoes, honey, vinegar, salt and pepper and
stir well.

Cook the sauce until it thickens,
stirring constantly.

Season the tomato and
honey sauce with salt and pepper according to taste.

Serve hot or cold.
Note:
This
sweet,
spicy sauce can be used to accompany a wide variety
of dishes. It
is delicious served hot with lamb cutlets, braised
broccoli or potato cakes. It is also excellent cold
with roast beef.
