Tomato Ketchup

Serves 4
Method:

Peel the tomatoes, cut into quarters and remove the
seeds. Cut the tomato quarters into small cubes and
put in a pan.

Add 5 tablespoons of water and bring
to the boil. Season with vinegar, sugar, honey,
ground cinnamon, nutmeg, salt and pepper.

Simmer for about 1 hour, stirring now and again,
until the sauce has thickened. Strain the sauce
through a sieve and cook for another 10 minutes.
Season to taste.

Allow the sauce to cool down and pour into screw-top
jars. Store in a refrigerator. The ketchup should
not be kept long.
Note:
Tomato ketchup has
its place
in
every
refrigerator and is particularly
popular with
children. Various kinds of ketchup can be bought but
none tastes as delicious as that which you make
yourself!
