Tomato and Onion Sauce

g/1 3/4 lb beef tomatoes

5 tablespoons olive oil

salt

black pepper from the
mill

1 tablespoon apple vinegar

1 tablespoon honey
Serves 4
Method:

Peel the
onions and cloves of garlic. Dice the onions. Peel the
tomatoes, cut into quarters and remove the seeds.
Dice the tomato quarters finely.

Heat
the oil in a pan and braise the onions lightly. Add
the tomatoes and simmer until the sauce begins to
thicken, stirring constantly.

Season with salt,
pepper, vinegar and honey.

Shortly before the sauce is ready, add the pressed
garlic. Season again according to taste.

Serve the
tomato and onion sauce
hot.
Note: A spicy
sauce
made
from red onions and tomatoes, flavored with cider
vinegar and honey. It is delicious served with roast
pork and beef, fish and potatoes boiled in their
skins.
