Tomato Sauce for Fish, Meat and Vegetables

Ingredients

1 onion, finely
chopped

2 cloves garlic

1 kg/2 1/4 lb over-ripe tomatoes

1 teaspoon olive oil

tablespoons tomato puree some vegetable stock
(broth)

tablespoon fresh chopped

herbs, for instance,
basil, oregano, parsley

herb salt
-
freshly ground pepper
-
1 teaspoon honey
-
1 tablespoon balsamic
vinegar
Serves 4
Method:

Peel the onions and
cloves of garlic and chop finely. Peel and cut the
tomatoes into quarters and remove the seeds. Chop
the tomato quarters into small cubes.

Heat the olive oil in
a saucepan, add the onions and garlic and fry until
transparent. Stir in the tomato puree and vegetable
stock (broth). Cook briefly.

Add the diced tomatoes,
stir and simmer without a lid over a low heat for
about 30 minutes.

Add the herbs and
season with herb salt, pepper, honey and vinegar.
Puree the sauce if preferred.
Note: This
universal
tomato sauce will lift any
dish.
Whenever meat, fish or
vegetables
taste too bland or dry on their own, this simple
home-made sauce will enhance the dish.
