Ingredients

  • 2 cans tomatoes (400 g/14 oz each)

  • 70 g/3 oz red onions

  • 4 pickled gherkins

  • 5 tablespoons sunflower oil

  • 2 teaspoons sugar

  • salt

  • pepper

Serves 4


Method:

  1. Drain the tomatoes and cut into thin slices. Peel the onions and chop finely. Dice the pickled gherkins finely.

  2. Heat the oil in a pan and braise the onions lightly. Add the tomatoes and gherkins. Season with sugar, salt and pepper.

  3. Cook the sauce until it begins to thicken, stirring constantly. Season again after cooking and leave to cool down.

  4. Pour into screw-top jars and store in the refrigerator. The sauce should not be kept long.

Note: This tomato sauce is ideal for barbecues as well as for everyday fried food. The ingredients can be varied to taste. For a spicier sauce, add Tabasco or cayenne pepper, while for a milder, creamier one, add a tablespoon of crème fraiche.
