Tomato Sorbet with Gin

55 g/2 oz
(1/4 cup) sugar

750 g/1 3/4 lb tomatoes

m1/3 1/2 fl oz (1/2 cup) gin

juice of 1 lime

sliced lime for the
garnish
Serves 6
Method:

Bring the sugar to
the boil with
100
ml/3 1/2
fl
oz
(scant 1/2 cup) water. Simmer gently until the sugar has completely
dissolved, stirring constantly. Remove from the heat
and leave to cool.

Peel the tomatoes,
cut into quarters and remove the seeds. Chop the
tomato pieces finely and put in a saucepan.

Simmer
over a low heat for about 20 minutes, stirring
occasionally.

Puree the
tomatoes with the sugar solution in a liquidizer or
with a hand-mixer. Put this mixture in a freezer box
and put in the freezer compartment. Stir from time
to time with a whisk as it freezes.

Divide the tomato
sorbet into six portions and put them in cold
glasses or glass bowls. Mix the gin and lime juice
and sprinkle over the sorbet.

Garnish with slices of
lime and serve immediately.
Note:
A
sorbet is a semi-frozen dessert made from
fruit pulp which
was invented by the ancient Persians. It is often
served with alcohol as a refreshment just before the
main course of a large meal.
