Tomato Stock

Method:

Peel the tomatoes and cut into small pieces. Put the
chopped tomatoes in a stainless steel sieve.

Press
the tomatoes to extract all the liquid, catching the
juice in a bowl.

Put the tomato juice in a small
saucepan and simmer over a low heat without a lid
until it begins to thicken a little.
Note:
This is a stock
(broth) prepared from cooked home-pressed tomato
juice. It is an ideal base for all kinds of soups
and can be used instead of vegetable, meat or fish
stock (broth). The stock (broth) has not been
seasoned, so this should be adjusted appropriately
when preparing the dish in which it is used.
