4 Cherry-medium
tomatoes

1 shallot

2 cloves garlic

125 ml/4 fl oz
(1 cup) tarragon vinegar

1/2 teaspoon medium
mustard

1 pinch sugar
-
salt
-
white pepper

250 ml/8 fl oz (1
cup) vegetable oil
Serves 4
Method:

Cut the tomatoes in
half, remove the seeds, cut into very fine strips
and cut these in half again. Peel the shallots and
cloves of garlic; chop finely.

Whisk the tarragon
vinegar, mustard, sugar, salt and pepper together in
a bowl.

Slowly add the oil and stir it in. Add the
tomatoes and stir well. Season again to taste.
Note:
Tomato vinaigrette
is a delicate salad dressing made from thin strips
of tomatoes, shallots and garlic,
in vinegar
and oil. It is delicious with all leaf salads such
as lettuce, radicchio or curly
endive.
