Traditional Tomato Sauce for Pasta
Recipe
Ingredients
Serves 4
Method:
-
Peel the tomatoes,
cut into quarters and remove the seeds. Chop the
tomatoes into small cubes. Peel the shallots and
clove of garlic and chop finely.
-
Heat the oil in a
pan. Add the shallots and garlic and fry them. Then
add the diced tomatoes and season with salt, pepper,
sugar and vinegar.
-
Bring to the boil and simmer for
about 45 minutes over a low heat with the lid on. If
the sauce becomes too thick, add a little water.
-
Continue simmering
the sauce for another 5 minutes. Season again to
taste. Serve hot.
Note: Spaghetti with tomato
sauce has become a classic which is always popular
with everyone, whether as a first or main course. It
is a good idea to prepare large amounts of the sauce
in advance and freeze in individual portions. This
makes it possible to conjure up a delicious meal in
no time at all. The sauce is simply defrosted, and
reheated while the pasta is cooked.
