Ingredients

  • 800 g/1 3/4 lb beef tomatoes

  • 2 shallots

  • 1 clove garlic

  • 2 tablespoons olive oil

  • salt

  • pepper

  • 1 pinch sugar

  • 1 tablespoon balsamic vinegar

Serves 4


Method:

  1. Peel the tomatoes, cut into quarters and remove the seeds. Chop the tomatoes into small cubes. Peel the shallots and clove of garlic and chop finely.

  2. Heat the oil in a pan. Add the shallots and garlic and fry them. Then add the diced tomatoes and season with salt, pepper, sugar and vinegar.

  3. Bring to the boil and simmer for about 45 minutes over a low heat with the lid on. If the sauce becomes too thick, add a little water.

  4. Continue simmering the sauce for another 5 minutes. Season again to taste. Serve hot.

Note: Spaghetti with tomato sauce has become a classic which is always popular with everyone, whether as a first or main course. It is a good idea to prepare large amounts of the sauce in advance and freeze in individual portions. This makes it possible to conjure up a delicious meal in no time at all. The sauce is simply defrosted, and reheated while the pasta is cooked.
