Seafood and Meat Recipes - Chicken Livers in Tomato

Method:

Rinse the chicken livers and pat dry with kitchen paper.
Peel the shallots and carrots and slice both finely.
Peel the tomatoes, cut into quarters and remove the
seeds. Cut the tomatoes into strips. Chop the thyme.

Heat 2 tablespoons oil in a pan, add the livers and fry.
Season with salt and pepper. Put to one side.

Heat the remaining oil in a pan. Add the shallot rings
and sliced carrots. Add the ketchup and stir well. Cook
briefly. Add the tomatoes and spices and simmer for
about 10 minutes.

Heat up the chicken livers briefly and serve with the
tomato sauce. Season again with salt and pepper just
before serving.
Note:
A "must" for those
who enjoy liver: chicken livers served in a
delicious tomato sauce flavored with thyme. Wild
rice makes an excellent accompaniment.
