finely. Chop up the sage. Peel the tomatoes, cut into
quarters and remove the seeds. Cut the tomato pieces
into small cubes.
-
Heat the butter in a pan and fry the chopped onion.
Squeeze the bread to remove as much milk as possible,
tear into small pieces and fry briefly in the pan.
Transfer the onion and bread mixture to a bowl.
-
Put the minced (ground) pork and beef, egg, flour and
sage in the bowl with the bread and onion mixture. Knead
well. Season with salt and pepper and make into small
meat balls.
-
Heat the oil in a large pan and fry the meat balls all
over until brown. Put the meat balls in a bowl and pour
the port over them.
-
Put the diced tomatoes in the liquidizer and puree at
the highest speed. Season with salt, tabasco, olive oil
and lime juice. Serve the tomato sauce cold with the
meat balls.
Note:
Like
hamburgers, meat
balls are made
from seasoned minced
(ground) meat,
fried in a pan. This version is made of beef and
pork, served with tomato sauce flavored with lime
juice.
