Seafood and Meat Recipes - Pork Chops on a Bed of
Tomatoes and Apple Recipe
Ingredients

1 can chopped
tomatoes (400 g/14 oz)

200 ml apple juice

50 mll3 fl oz (6
tablespoons) raspberry vinegar

1 teaspoon sugar

2 cloves
-
1 tablespoon grated
orange zest

3 small russet apples
-
4 pork chops (150 g/5
oz each)
Serves 4
Method:

Preheat the oven to 200°C (400°F), Gas mark 6.

Drain
the chopped tomatoes and put in a bowl. Add the apple
juice, vinegar, sugar, cloves and orange zest and stir
well.

Peel the apples, cut into quarters and remove the
cores. Cut the apple quarters into slices and add to the
bowl with the other ingredients. Stir well.

Fill a casserole with half the tomato and apple mixture.
Arrange the chops next to each other on top. Cover with
the rest of the tomato and apple mixture. Cover and put
in the oven.

After 20 minutes, remove the lid and continue cooking in
the oven for a further 10 minutes.
Note:
Pork has a special affinity with apples. In this
dish, the delicious aroma of tomatoes and apples is
enhanced by the addition of sugar, cloves and grated
zest of orange. Serve with mashed potato.
