Prawns (Shrimps) with Tomato Sauce

Ingredients

8 ripe beef tomatoes

3 tablespoons olive
oil

1 teaspoon dried
Italian herbs

salt
-
1 pinch sugar

lemon pepper
-
24 large prawns
(shrimps), without head and
peeled

60 g/2 oz (4 tablespoons) clarified butter
Serves 4
Method:

Peel the
tomatoes,
cut into
quarters and remove the seeds. Cut the
tomato pieces into
small cubes.

Heat the olive oil in a pan, add the
diced tomatoes and cook until the mixture thickens,
stirring all the time. Season with herbs, salt,
sugar and pepper. Put the sauce in a warm place.

Stick the prawns
(shrimps) on four wooden skewers. Heat the clarified
butter in a large pan and fry the skewers on both
sides for about 5 minutes over medium heat.

Pour the tomato sauce
on the plates and arrange the prawns (shrimps) on
top. Sprinkle with salt and pepper.
Note:
This delicious dish is very easy and quick to make: the prawns
(shrimps) are prepared in an instant!
