Candied Tomatoes

800 g/1 3/4 lb
beef tomatoes

2 slices white bread

1
small container green peppercorns in brine

tablespoons brown sugar

3
tablespoons white winevinegar

1/2
teaspoon dried basil

white pepper from the mill

butter for the mould
Serves 4
Method:

Pre-heat the oven to 200°C (400°F), Gas mark 6.

Peel the tomatoes, cut into quarters and remove the
seeds. Cut the crusts off the slices of white bread
and cut them into large cubes.

Remove the
peppercorns from the brine and crush with the back
of a knife. Reserve the brine.

Put the tomato pieces and diced bread in a bowl and
mix well. Add the sugar, vinegar, basil and green
peppercorns, and lastly the brine. Stir well. Season
with pepper and salt. Taste and season again
if
necessary.

Butter a
baking tin generously and add the tomato mixture.
Put on the middle shelf of the oven and cook for
30-40 minutes.
Note:
This
baked
sweet-and-sour tomato dish is delicious with
crisp
roast
chicken, and
they can both be cooked at the same time in a fan
oven. While they both cook, there is plenty of time
to clear up the kitchen
- useful when
guests are expected.
