Fried Green Tomatoes with Béchamel Sauce

6 soft green tomatoes
(already showing traces of orange)

clarified butter

1-2 cups breadcrumbs

65 g/2 1/2 oz (5
tablespoons) butter

6 tablespoons flour
-
500 ml/17 fl oz (2
1/4
cups) milk nutmeg

Tabasco

1 egg yolk
Serves 4
Method:

Slice the green tomatoes. Beat the eggs. Preheat
the oven to its lowest setting, 80C (175F). Heat
the clarified butter in a large saucepan.

Dip the tomato slices first in the beaten eggs, then
in the breadcrumbs. On a medium heat, carefully fry
the breaded tomato slices a few at a time until
golden brown.

Season with salt and pepper, arrange
on a baking sheet lined with kitchen paper and put
in the oven to keep warm.

For the sauce: melt the butter in a saucepan and add
flour. Stir vigorously with a whisk and slowly add
the milk while stirring. Season with salt, pepper,
nutmeg and Tabasco. Remove the saucepan from the
heat and when it is no longer boiling, stir the egg
yolks into the sauce.

Put the tomatoes on individual plates and serve the
hot sauce separately.
Note: Green tomatoes do not
only playa part in the movie of the same name, they
also stand out in this mouth-watering dish, served
with a tasty white sauce.
