Fried Tomatoes with Mint Sauce

plum tomatoes

salt
-
olive oil for cooking

500 ml/17 fl oz (2 1/4 cups)
yoghurt

1 tablespoon curry powder
-
1 pinch ground
cinnamon
-
1 tablespoon chopped
fresh mint

1 tablespoon lemon juice
-
pepper
-
cayenne pepper
Serves 4
Method:

Cut the plum
tomatoes
lengthways into slices 1
cm/3/8 in thick.
Season with salt and leave to stand for about 15
minutes.

Heat the oil in a pan, add the tomato slices, a few
at a time, and fry on both sides until golden brown.
Put in a warm place.

For the sauce: pour the yoghurt into large bowl and
stir until smooth. Add the remaining ingredients,
stir again and season to taste.

Serve the sauce separately from the tomatoes.
Note:
The lightly mint-flavored
sauce
makes a perfect accompaniment to the fried tomatoes.
It is excellent with hot spicy dishes, such as meat
balls with chili, because its cool, refreshing
taste pleasantly counter-balances the spiciness of
the dish.
