Mashed Potato
Gratin with Tomato Sauce

butter

250 ml/8 fl oz (1 cup) milk

1 egg

600 g/1 1/4 lb ripe tomatoes

clove garlic

oil for the pan

1 teaspoon tomato
ketchup

1/2 teaspoon dried Italian herbs

1 small sprig
rosemary

Method:
-
Boil unpeeled potatoes for about 25 minutes until
soft. Pre-heat the oven to 220°C( (425°F), Gas mark
7.

Peel the boiled potatoes, put in a bowl and mash
with a fork. Add the Parmesan, butter, milk and egg.
Puree this mixture in a blender until it is smooth
and homogenous. If it seems too dry, add some milk.
Season the mash with salt, pepper and nutmeg.

Put the mashed potato in four small moulds and cook
on the middle
shelf of the oven for 15 -20 minutes until golden
brown.

For the tomato sauce: cut the tomatoes into four and
dice finely. Peel the shallots and cloves of garlic,
chop finely.

Heat the oil in a saucepan, add the chopped garlic
and shallots and fry. Add the diced tomatoes and
tomato ketchup; season with herbs, a little sugar,
salt and pepper.

Simmer the tomato sauce for about
10 minutes. Remove the rosemary.

Serve the tomato sauce hot with the mashed potato
gratin.
