Spaghetti with Cherry Tomatoes

Ingredients

1 clove garlic

3 tablespoons olive
oil

1 tablespoon chopped
basil

1 tablespoon chopped
parsley

500 g/18 oz cherry tomatoes
-
spiced oil
-
herb salt
-
freshly ground pepper
-
500 g/18 oz spaghetti
-
salt
-
150 g/5 oz peas
-
150 g/5 oz curd
cheese with feta
Serves 4
Method:

Pre-heat the oven to 220°C/425°F, Gas mark 7. Peel
the garlic and
chop
finely. Stir the olive oil, garlic, basil and
parsley together in a small bowl.

Put the tomatoes in a large baking tin. Pour
seasoned oil over the tomatoes. Sprinkle with herb
salt and pepper. Cook the tomatoes in the preheated
oven for 10 minutes.

Boil the spaghetti in plenty of salted water
following the instructions until cooked al dente.
Add the peas 3 minutes before the end of the cooking
time.

Drain the spaghetti and peas, reserving 250 mll8 fl
oz (1 cup) of the cooking water in a bowl.

Stir the cooking water into the curd cheese and beat
with a whisk to make a creamy sauce. Season to
taste.

Add the mixture of spaghetti and peas to the cherry
tomatoes in the baking tin. Pour the cheese sauce
over it and stir well. Season again with salt and
pepper and serve hot.
Note: A
simple but delicious dish which only takes half an
hour to prepare. Instead of spaghetti spiral-shaped
pasta, tagliatelli, farfalle, penne or even
whole-meal (whole wheat) pasta can be used. The
latter is particularly rich in fiber and B-vitamins.
