Stuffing Tomatoes
with Rice and Sultanas (Golden Raisins)

2 shallots

beef tomatoes

150 g/5 oz (3/4 cup)
rice

2 teaspoons chopped
almonds

50 g/2 oz (1/3 cup)
sultanas (golden raisins)

ground cinnamon
-
curry
powder
-
salt
-
pepper
-
4 tablespoons tomato
ketchup
-

tablespoons sunflower oil
Serves 4
Method:

Peel and chop the
shallots. Cut the tops off the tomatoes and
carefully remove the tomato pulp using a teaspoon.

Chop the tomato pulp
finely and put in a bowl. Add the uncooked rice,
chopped shallots, chopped almonds and sultanas
(golden raisins).

Stir well and sprinkle lightly
with cinnamon and curry powder. Season with salt and
pepper. Stir thoroughly again.

Put the hollowed-out
tomatoes next to each other in a large saucepan and
fill with the tomato and rice stuffing.

Mix the oil
and tomato ketchup and pour over the tomatoes.
Carefully fill the saucepan with water to reach
halfway up the tomatoes.

Cover the saucepan,
bring to the boil and simmer gently for about 30
minutes. Remove the stuffed tomatoes from the
saucepan with a perforated spoon.
Note:
These tomatoes
stuffed with rice and sultanas (golden raisins) and
other tasty ingredients including almonds, curry
powder and cinnamon are delicious with most lamb
dishes.
