Tomatoes a al Provencale

Method:

Preheat the oven to 220°C (425°F), Gas mark 7.
Butter a baking tin generously. Peel the garlic.

Add the herbs and pressed garlic to the oil. Season
with salt and
pepper.

Cut the tomatoes into three, remove the seeds and
salt lightly. Place the tomato pieces in the baking
tin and pour the herb oil over them.

Put on the middle shelf of the oven and bake for 30
minutes.
Note:
These baked tomatoes
seasoned with herbs of Provence conjure up images of
sun, sea, sand... and France. Delicious when served
with rabbit in mustard sauce and crusty white bread.
