Tomatoes
Gratin with Olives and Herbs

Serves 4
Method:

Pre-heat the oven to
220°C (425°F), Gas mark 7. Butter a baking tin
generously.

Chop the
olives and parsley. Cut the top off the tomatoes and
carefully remove the pulp using a teaspoon. Chop the
tomato pulp.

Put the chopped tomato pulp in a bowl
and add the oil, olives and parsley. Add the
breadcrumbs and egg and mix thoroughly. Season with
salt, pepper and basil.

Place the hollowed out tomatoes
next to each other in the baking tin and fill with
the tomato and olive mixture.

Put on the middle
shelf of the oven and bake for about 20 minutes.
Note: Gratins tomatoes
with black
olives and herbs are very tasty with a crusty
baguette. They are even more delicious served with
fried sardines, washed down with a glass of Pinot
Bianco.
