with Bananas

ripe bananas

1 tablespoon lemon
juice

500g/18 oz firm
tomatoes

2 tablespoons
balsamic vinegar

6 tablespoons
sunflower oil

1/2 teaspoon
medium strength
mustard

salt
-
pepper
-
curry powder
-
sugar
-
1 bunch smooth
parsley
Serves 4
Method:

Peel
and slice the bananas and sprinkle with lemon juice.
Peel the tomatoes, cut in half and slice. Put the
tomato and banana slices in a bowl and mix together
carefully.

For the salad dressing: mix the vinegar, oil and mustard together and
stir vigorously. Season to taste with salt, pepper,
curry powder and sugar. Pour the dressing over the
salad and stir gently.

Arrange the salad on four plates and sprinkle with
chopped parsley.
Note:
This red and yellow salad will add an exotic touch to the table.
Served in a hollowed-out pineapple, it will conjure
up images of the Caribbean.
