cup) white wine

200 g/7 oz curd
cheese

100 g/3 1/2 oz
crème
fraiche

2 tablespoons tomato puree

Method:

Cut the ham into
small cubes. Heat the oil in a large pan and fry the
diced ham briefly.

Pour the tomatoes
through a sieve and reserve the liquid. Dice the
tomatoes. Put the diced tomatoes and juice into a
saucepan and stir.

Add the beef stock (broth) and
wine. Bring the soup to the boil and simmer for
about 15 minutes.

Put the curd cheese,
crème fraiche and tomato puree in a bowl and stir
until the mixture is smooth. Add 2 cups of stock
(broth) to this mixture and stir well.

Stir the crème fraiche into the soup and bring back to the
boil. Season the tomato soup to taste with salt and
pepper.
Note:
The wine adds a special touch to this dish,
enhancing the flavor of this traditional tomato
soup with delicious results.
