Stew with Meatballs

1 can mixed mushrooms
(300 g/10
oz)

3 small cucumbers
-
500 g/18 oz beef tomatoes
-
250 g/9 oz minced
(ground) pork
-

salt

3 teaspoons cooking
fat

2 tablespoons oil

750 m1/1 1/4
pints (3
1/2 cups) vegetable stock
(broth)

1 tablespoon chopped
dill

3 tablespoons
crème fraiche
Serves 4
Method:

Drain the mushrooms thoroughly. Peel the cucumbers, cut
into half, remove the seeds and slice; cut the tomatoes
into quarters.

Season the minced (ground) pork with salt and pepper and
make it into small meat balls. Heat the cooking fat in a
pan and fry the meat balls all over until well browned.
Remove from the pan and put aside.

Heat the oil in a large saucepan. Briefly fry the mixed
mushrooms and cucumber.

Add the chopped tomatoes, stir
and cover with the vegetable stock (broth). Bring to the
boil and simmer on a low heat for about 20 minutes.

Add the meat balls and dill to the liquid and stir in
the crème fraiche. Season to taste with salt and pepper.
