Ingredients

  • 1 can mixed mushrooms (300 g/10 oz)

  • 3 small cucumbers

  • 500 g/18 oz beef tomatoes

  • 250 g/9 oz minced (ground) pork

  • pepper

  • salt

  • 3 teaspoons cooking fat

  • 2 tablespoons oil

  • 750 m1/1 1/4 pints (3 1/2 cups) vegetable stock (broth)

  • 1 tablespoon chopped dill

  • 3 tablespoons crème fraiche

Serves 4


Method:

  1. Drain the mushrooms thoroughly. Peel the cucumbers, cut into half, remove the seeds and slice; cut the tomatoes into quarters.

  2. Season the minced (ground) pork with salt and pepper and make it into small meat balls. Heat the cooking fat in a pan and fry the meat balls all over until well browned. Remove from the pan and put aside.

  3. Heat the oil in a large saucepan. Briefly fry the mixed mushrooms and cucumber.

  4. Add the chopped tomatoes, stir and cover with the vegetable stock (broth). Bring to the boil and simmer on a low heat for about 20 minutes.

  5. Add the meat balls and dill to the liquid and stir in the crème fraiche. Season to taste with salt and pepper.

Note: This stew made with cucumbers, tomatoes, mushrooms and crème fraiche is a dish which will please everyone.
